Ingredientes

10 pounds of chopped pork

32 ounces of chile colorado

3 bay leaves

1 tablespoon of oregano

2 tablespoons of Knorr bouillon


Step One


Cook the pork in a pot with the Knorr bouillon, bay leaves, and oregano.

Stir to let the flavors come together and let it simmer for about 40 minutes.

According to Marta, you’ll know the meat is getting close when the kitchen starts to smell like happiness and people begin asking what you’re making.

Step Two


It’s time to make the chile colorado.

Boil the chiles in a pot of water for about 10 minutes. Then, blend the chiles, garlic, onion, and a bit of salt to taste. Add a little water or broth and blend until it reaches the desired consistency.

“One tip I give people is that if the sauce turns out too spicy, just add a couple of tomatoes to balance the flavor. After making it so many times, I’ve learned to read the chiles—I know when it’s going to be spicy or not,” says Marta as she dips a spoon into the blender and confirms her salsa is delicious.

Step Three


“If it was already smelling good in here, now it’s about to smell even better!” says Marta as she adds the chile colorado to the cooked pork and starts stirring.

She’s right—like magic, customers who had come into the store for something else start to drift closer, thinking they just might wait around to try the asado once it’s ready.

Let the meat absorb the flavor of the chile colorado for about 15 minutes, and it’ll be ready.
